Farmers Market Salad

Celebrate the peak of summer produce with this simple salad featuring farm-fresh corn, a variety of vegetables and a delicious pickled jalapeño vinaigrette!

So easy and adaptable, customize the add-ins to suit your tastes and the produce you have on hand.

Salad ingredients:

Fresh corn kernels from 4 ears of corn
1 -2 cups chopped tomatoes and/or halved cherry tomatoes 

2 green onions, sliced

2 -3 radish, thinly sliced

1/2 large bell pepper, diced 

Big handful fresh herbs such as parsley, basil, dill, cilantro or a mix 

Pickled Jalapeño Vinaigrette:

2-3 tbsp finely diced Catie’s pickled jalapeños 

1/2 small garlic clove, minced (we use a clove from the jar of jalapeños )

3 tbsp pickled jalapeño brine

2 tbsp olive oil 

1/2 tsp honey

Salt & pepper to taste

* Adjust oil/brine amounts to suit spice preferences.

Drizzle desired amount over salad and toss gently.

Note: This vinaigrette is also great in a bean salad, or an avocado & greens salad, drizzled over grilled fish, or stir a spoonful into warm rice for a little flavour boost.

Other ideas:

Grill the corn or use it fresh off the cob. Add some green beans or black beans. Switch up the herbs, top with feta, add pepitas for crunch.
