Compound butter with Pickled Garlic Scapes
Stash this versatile, flavourful mixture in your fridge or freezer for whenever you want to add a fresh burst of buttery flavour to a dish.
Fantastic with fish, melted into potatoes or over steamed vegetables, stirred into scrambled eggs, tucked under the skin of a roasting chicken - or simply slathered on a crusty baguette.
Ingredients:
1 stick (113 grams) unsalted butter, softened
1 tbsp finely diced Pickled Garlic Scapes
1 tbsp minced chives
1 tbsp minced fresh dill
1 tsp lemon juice
1 tsp lemon zest
1/2 tsp fine sea salt
Instructions:
Add all ingredients into a bowl and mash with a fork until well combined.
Spoon onto a piece of parchment paper or plastic wrap and shape into a log. Wrap and chill. Slice into rounds and use as desired.
Keep refrigerated for several days or freeze for longer storage.
Top salmon or fish of choice with garlic scape butter, wrap in parchment and roast - simple & delicious!
