Ultimate Veggie Sandwich
Colourful, creamy, crunchy and packed with plant power, this veggie sandwich delivers fresh flavours in every bite.
It’s piled high with an array of nutrient-rich ingredients, from creamy chickpea salad to the vibrant pickled beet and cabbage slaw.
Here’s how we make it - use this as a general template, measure and season with your heart and make it your own!
Ingredients:
Dilly chickpea salad (see below)
Pickled beet and cabbage slaw (see below)
Lettuce/mixed greens of choice
Shredded carrots
Sliced cucumbers
Microgreens/sprouts
Bread - choose a hearty sourdough or bread with a little heft to support the filling.
Chickpea Salad:
Mash 1 cup of chickpeas with a fork or potato masher and mix with a couple of tablespoons of mayonnaise and/or Greek yogurt to desired level of creaminess. Toss in some finely diced red or green onion, celery and a big handful of chopped fresh dill. Add a dollop of your favourite mustard - we like one with a little heat - add a squeeze of fresh lemon juice and season to taste with salt and pepper.
This makes enough for two generous sandwiches.
Pickled beet slaw
Thinly slice some red cabbage and toss with a drizzle of brine from the jar of beets. (Not too much, you don’t want a liquidy mixture, just enough to lightly pickle the cabbage and add extra flavour.)
Thinly slice a few wedges of Catie’s Pickled Beets and toss with the cabbage.
Build your sandwich:
Toast bread if desired and spread with a little mayo.
Layer one slice of bread with lettuce, chickpea salad, cucumber slices, grated carrots, pickled beet & cabbage mixture, and microgreens.
Top with second slice of bread, slice in half and dig in!
Variations:
Layer everything into a tortilla for a wrap.
Arrange all the components in a bowl and enjoy as a big salad.
Use any white bean in place of the chickpeas - cannellini, butter beans or navy beans all work.
Use parsley instead of dill - or a combination of the two.
Mix up the veggies to your liking - thinly sliced bell peppers, tomatoes, and sliced avocado would all be delicious.
