West Coast Salmon with Lemon & Pickled Garlic Scapes

Fish en papillote is a simple way to enjoy Pickled Garlic Scapes. Their gentle garlic flavour and bright acidity pair beautifully with salmon and fresh lemon.

Ingredients:

• Fresh salmon fillet

• 2–3 Pickled Garlic Scapes

• Lemon slices

• Olive oil

• Salt and pepper

• Parchment paper

Method:

Preheat oven to 375 F (190 C).

Place the salmon fillet on a sheet of parchment paper.

Top with lemon slices and whole Pickled Garlic Scapes.

Drizzle lightly with olive oil and season with salt and pepper.

Fold the parchment over the salmon and seal the edges tightly to create a parcel. This traps the steam while baking, gently cooking the fish and keeping it moist and tender.

Bake for 12–15 minutes, depending on the thickness of the salmon.

Simple, bright, and delicious.
